Ritz Cake - Ritz Cracker Treat - The dessert they will keep begging for.

6 egg whites
1 1/2 cup sugar
50 plain Ritz crackers, very crushed
2 teaspoon vanilla
1 1/2 cup pecans, chopped
1 pint (2 cups) heavy whipping cream
4 tablespoons sugar
7 oz. bag of Angel Flake coconut
Note: Save a little coconut to sprinkle over the top of cake when done​

Beat egg whites gradually adding 1 1/2 cup sugar while beating until stiff. Fold in crushed crackers, vanilla, nuts and coconut. Put into a 9x13 greased baking dish and bake at 350-F for 20 or 30 minutes using a toothpick test to see if done. Remove from oven and let cool.

Whip the cream adding 4 tablespoon sugar. Spread on cooled cake, sprinkle with coconut, lightly cover and chill for 4 hours or overnight.
